I made a dessert today. Cocoa almond pain de gene soaked in an orgeat I made for my home bar, chocolate brown butter crisps, butter and lemon gelee, sloe berry sauce, peppermint crumbs, pickled blueberries and anise frozen yogurt foam. The finished dish got sprayed with tinctures I made from green chartruese, fennel seeds and white pastis. Presentation inspired by mt. Whoville.
